Ingredients for 4
3 cups dried beans, garlic, sage, rosemary, extra virgin
olive oil, salt and pepper, 6 slices of sweet bacon
“pancetta”
Preparation
Soak dried beans for several hours or overnight. Boil in
salted water with 1 clove of garlic and 3 sage leaves.
Place the boiled beans in a deep baking dish. Dress
with oil, rosemary, salt and pepper. Mix well and bake
for 25 minutes at 350F. When the beans begin to
color, cover the beans with the pieces of pancetta.
Bake for a few more minutes until the pancetta becomes
semi crispy.
Notes
Substitute cannellini with pinto beans.
